David has worked with us for years and honed his skills with wood-fired ovens in Australia, working at places such as the Little Creatures Brewery in Fremantle, the Good Looking Mobile Wood-fired Catering Company, and also the Cargo Bar Pizza Lounge in Hobart, Tasmania. David also works as a private chef throughout Europe.
The average day is about 6 hours. This includes:
Lighting and preparing the oven. Using the right wood
Making a pizza dough / bread dough / flat breads.
Preparing marinades and garnishes.
Preparing and cutting meat / fish for skewers and roasts.
All elements of using the oven, maintaining / regulating the temperature
Using accessories and racks.
